Guilt Free Caramel Squares!

Please refrain from dribbling all over your screen, I know how hard it is just look at these bad boys!

We got the work on the recipe and everything from the unbaked mixture to its setting phase in the freezer filled me with doubt, had I just spent far too much money on a disastrous tray of slop?

Hold the phone, these were amazing! They should not be compared to a traditional Caramel Square because they are an experience all on their own, if you are unsure about raw baking this one is for you. They were the right balance between salty and sweet and it was a struggle to keep my guests hands out of the tuppawear container I had to hide them away in. Rations were given because everyone wanted seconds and thirds! So if you want to impress at a party with your healthy treats this one is a crowd pleaser.

Recipe


Base:

1½ Cups Pitted Dates

1 Cup Cashews Caramel:

1½ Cups Pitted Dates ½ Cup Almond Butter 3-4 Tablespoons Coconut Oil Natural Sea Salt

Topping:

200g Dark Chocolate


Method


Base:

1. Measure and soak your dates in hot water for 40 minutes, this will make for a smoother and easier blend. 2. Simply blend your Cashews with the Dates in a food processor or with a hand blender, until smooth. 3. Smooth the mixture into a tray, keeping the mixture about an inch thick. You then place this in the freezer while you prepare the rest of the components.

Caramel:

1. Again start off my measuring you dates followed by soaking them for 40 minutes or more in hot water. You want your dates to be as soft as possible for this stage. 2. Blend your dates alone into as smooth a mixture as possible. When you are happy with your dates you can blend in your almond butter and coconut oil. 3. The mixture will be thick and glossy, add in more coconut oil if you need it. Spread the mix of top of your now semi frozen base and pop it all back in the freezer to set.

Topping:


1. Simply melt your dark chocolate and then smooth it on top of your two layers already prepared in the freezer. 2. Pop it all back in the freezer wait 15 minutes and take out and cut to serve. You need to keep your cut pieces in the fridge as it will melt in the heat of the room. 3. Then simply enjoy! Conclusion These treats are ridiculously good! Have you tried them out?
